Preheat oven to 350°.
Whisk together the flour, baking soda, and salt in a bowl and set aside.
Melt butter on low heat in a saucepan. While stirring butter, add a little bit of coffee at a time until all is dissolved.
Add butter mixture to mixing bowl. Add sugar and brown sugar and mix. Add vanilla and mix. The mixture should be cool enough for eggs.
Add eggs one at a time and mix.
Adding about 1/3 of the flour at a time mixing at low speed. Scrape the sides with a spatula in between flour additions and after mixing.
Add pecans and mix. Add chocolate chips and mix.
Shape dough into 1.75" balls. Place dough balls 2 inches apart on a parchment lined baking sheet. Bake on middle oven rack for 10-11 minutes until lightly browned on the edges. Place cookies on cooling rack until completely cool.
If you want to use 2 baking sheets, shape dough into 1.75" balls. Place dough balls 2 inches apart on a parchment lined baking sheet. Bake on upper and lower ⅓ oven racks for 12-13 minutes until lightly browned on the edges. Rotate pans halfway through baking. Place cookies on cooling rack until completely cool.
