Florida Sunshine Cookies

Honey, Orange and Ginger drop cookies
Course Dessert

Ingredients
  

  • 2 ¼ cups flour
  • 1 tsp ginger, ground
  • ½ tsp baking soda
  • ½ tsp baking powder
  • tsp salt
  • cup sugar, granulated
  • 1 Tbsp orange zest
  • ½ cup butter, unsalted room temperature
  • ½ cup honey
  • 1 tsp orange extract
  • 1 egg

Instructions
 

  • Preheat oven to 350o.
  • Whisk together the flour, baking soda, baking powder, ginger, and salt in a bowl and set aside.
  • In a separate bowl, mix the sugar and orange zest by rubbing the sugar and zest between your fingers. Make sure zest is completely covered with sugar.
  • In a mixing bowl, beat butter until creamy.
  • Add sugar and orange zest to butter and beat.
  • Add honey to mixing bowl and beat.
  • Add egg to mixing bowl and beat.
  • Gradually add flour mixture and beat until just incorporated.
  • Cover dough and chill for 30 min to 1 hour.
  • Shape dough into 1" balls and roll in sugar. Place dough balls 2 inches apart on a parchment lined baking sheet. Bake on middle oven rack for 8-10 minutes until lightly browned on the edges. Place cookies on cooling rack until completely cool.
  • If you want to use 2 baking sheets, shape dough into 1" balls and roll in sugar. Place dough balls 2 inches apart on a parchment lined baking sheet. Bake on upper and lower ⅓ oven rack2 for 10-12 minutes until lightly browned on the edges. Place cookies on cooling rack until completely cool.

Notes

Be sure not to overmix dough. Overmixed eggs become chewy like a sponge.
